Roasted Red Pepper Sauce
1 16 oz. jar roasted red peppers
3 tablespoons olive oil
4 cloves garlic, smashed
1/4 cup milk of your choice
- Heat the oil over medium-low heat. Cook the garlic cloves a few minutes just until softened a bit. Turn off heat.
- Drain the peppers and place in a blender. Add the garlic and oil and blend. Add the milk and blend until smooth. If the sauce seems too thick add another tablespoon of water or milk. Taste and add salt if needed. Or black pepper if you like. You can use the sauce immediately or heat it gently in the same pan you cooked the garlic cloves. Use as a sauce for pasta, fritters, falafel, rice, chicken, fish, vegetables, etc.
