Roasted Beet Feta Salad
2 large beets, washed well
1/2 cup crumbled feta cheese
1/4 cup toasted coarsely chopped walnuts
chopped parsley
2-3 tablespoons balsamic vinegar
2 tablespoons olive oil
salt and pepper
Place the beets in a small roasting pan. Drizzle with a little olive oil, cover with foil, and bake at 375°F for one hour or until the beets are soft when poked with a knife. Let cool, peel, and cut into wedges or cubes. Arrange beets on 2 plates, sprinkle with walnuts, feta cheese and parsley, and drizzle with oil and vinegar. Season with salt and pepper.
