Pumpkin Chocolate Chip Bars

2 ½ cups all-purpose flour
1 teaspoon cinnamon
1 ½ teaspoons baking soda
1 1/2 teaspoons sea salt
1 cup (2 sticks) unsalted butter
1 cup cane sugar
3/4 cup brown sugar
1 large egg
1 ½ cups pumpkin puree (not pumpkin pie mix)
2 teaspoons vanilla extract
1 ½ cups semi sweet chocolate chips
2 – 3 tablespoons turbinado sugar
Scant teaspoon smoked flaky salt
- Melt the butter in a small saucepan. Pour into a large mixing bowl and let cool for a few minutes.
- Heat the oven to 350°F. Spray a 9×13-inch baking pan with cooking spray, coating thoroughly.
- In a bowl, whisk together the flour, cinnamon, baking soda, and salt.
- Add the sugars to the melted butter and beat until combined. Mix in the egg, pumpkin puree, and vanilla until smooth and creamy. Slowly add in the flour mixture and mix until combined. Add the chocolate chips. Spread mixture evenly into prepared baking dish. Sprinkle with smoked salt and turbinado sugar.
- Bake for 35 – 40 minutes or until a toothpick or sharp knife inserted in the center comes out clean. Let the pan cool on a rack before cutting into bars.
