Potato Bacon Bites
1 lb red potatoes, washed
1 package thin slice bacon
kosher salt
1 teaspoon Dijon mustard
1 tablespoon olive oil
salt and pepper
sour cream + chopped scallions

- Cut the potatoes into 1 inch chunks. Place in a pot, cover with water, add 1 tablespoon salt, bring to a boil, and cook until tender but not mushy, about 15 minutes. Drain and let cool.
- Cut the bacon slices into thirds.
- Whisk together the mustard, olive oil, and more salt and fresh cracked pepper in a bowl. Add the cooled potatoes and toss to coat.
- Heat oven to 400°F. Wrap a piece of bacon around each potato and secure with a toothpick. (The bacon won’t go all the way around the cube.) Spread the potato bacon bites on a rimmed sheetpan and bake for 30 minutes. Serve hot with sour cream and chopped scallions.
