Pfeffernusse Cookies
1 stick (1/2 cup) butter, softened
3/4 cup brown sugar
1/4 cup molasses
1 egg
2 1/4 cups white spelt or all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
1/2 teaspoon black pepper
1/2 teaspoon ground anise seed
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1 cup powdered sugar
- Combine butter, brown sugar and molasses in a large mixing bowl and beat until fluffy. Add the egg and beat well. Whisk together the flour, baking soda and spices in a separate bowl. Add the flour mixture to the wet ingredients and beat to combine.
- Preheat oven to 350°F. Scoop out heaping teaspoonsful of cookie dough and roll into balls about 1 inch thick. Place the dough balls on 2 greased baking sheets. Bake for 13 minutes, until firm to the touch. Remove from oven and let cool on the sheets for 2-3 minutes.
- Place the powdered sugar in a container with a lid. Drop a few cookies into the powdered sugar, cover and shake gently to coat. Transfer coated cookies to a wire cooling rack and let cool completely. Repeat with remaining cookies. Makes 2 dozen.
