Peas with Prosciutto
2 tablespoons extra virgin olive oil
2 medium shallots, chopped
2-3 garlic cloves, minced
16 oz fresh frozen peas, thawed
3 oz prosciutto, diced
1/4 to 1/2 cup roughly chopped fresh flat leaf Italian parsley
freshly ground black pepper to taste
sea salt to taste
Heat oil in large skillet over medium heat. Add shallots, garlic, salt and pepper and saute about one minute until shallots are transparent. Add the peas and saute about five minutes until heated through. Stir in prosciutto and cook for one or two more minutes. Stir in parsley and remove from heat. Add more salt and pepper to taste if needed.
