Parmesan Cauliflower Bites
1/2 large head cauliflower, cut into bite sized florets
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon seasoned salt
Pinch black pepper
2 large eggs
Optional: chopped parsley
Yogurt sauce
1 cup plain Greek yogurt
Juice from half a lemon
1/4 teaspoon garlic powder
1/2 teaspoon sea salt
- Preheat oven to 400°F. Line a large baking sheet with parchment paper.
- Add breadcrumbs, cheese, salt, and pepper to a large bowl and mix. Beat eggs in another bowl and dip the florets in the egg mixture; shake off the excess egg. Coat the florets in bread crumb mixture evenly and place on prepared pan. Repeat until all cauliflower is coated.
- Bake for about 25 minutes or until golden brown. Mix yogurt sauce ingredients together in a bowl while cauliflower bakes. Sprinkle florets with parsley and serve with yogurt sauce.
