Mushroom Black Bean Burgers

1 egg
2 tablespoons onion, minced
1/4 lb mushrooms, chopped
2 tablespoons cilantro, minced
3 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon sea salt
1/4  teaspoon black pepper
1 15-oz can black beans, rinsed, drained
1/2 cup panko bread crumbs
1 tablespoon vegetable oil

  1. Place egg, onion, mushroom, cilantro, garlic, and cumin in a food processor and pulse until mushrooms are finely chopped.
  2. Mash black beans. Mix together beans, mushroom mixture, salt, pepper and bread crumbs. Form into 4 patties and refrigerate 30 minutes. (Can be refrigerated overnight.)  
  3. Brush oil on burgers and grill 2 to 3 minutes on each side. Or fry in vegetable oil until golden on both sides and cooked through. Serve on a whole wheat bun topped with lettuce and a slice of tomato.
