Mushroom Black Bean Burgers
1 egg
2 tablespoons onion, minced
¼ lb mushrooms, chopped
2 tablespoons cilantro, minced
3 cloves garlic, minced
1 teaspoon ground cumin
½ teaspoon sea salt
¼ teaspoon black pepper
1 15-oz can black beans, rinsed, drained
½ cup panko bread crumbs
1 tablespoon vegetable oil
- Place egg, onion, mushroom, cilantro, garlic, and cumin in a food processor and pulse until mushrooms are finely chopped.
- Mash black beans. Mix together beans, mushroom mixture, salt, pepper and bread crumbs. Form into four patties and refrigerate 30 minutes. (Can be refrigerated overnight).
- Brush oil on burgers and grill 2 to 3 minutes on each side. Serve on a whole wheat bun topped with lettuce and a slice of tomato fresh from the garden.
