Mochi Brownies

1 cup sweet rice flour (Bob’s Redmill)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon espresso powder
1/2 cup cocoa
2 eggs
1/4 cup butter, melted
1 teaspoon vanilla
1 13.5 oz. can coconut milk
1 cup cane sugar
1 cup chocolate chips
Optional: 1/3 cup chopped walnuts or pecans

  1. Heat oven to 350°F and spray a 8 x 8 baking pan with cooking spray.
  2. Whisk the dry ingredients together in a small bowl and set aside.
  3. Beat the eggs in a large bowl. Whisk in the butter, vanilla, and coconut milk. Mix in the sugar until smooth.
  4. Add the dry mix to the wet mixture and stir until smooth. Add in the chocolate chips and optional chopped nuts.
  5. Pour the batter into the prepared pan and bake for 1 hour. Remove from oven and let cool completely before cutting into squares. Keep brownies refrigerated.
