Mochi Brownies
1 cup sweet rice flour (Bob’s Redmill)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon espresso powder
1/2 cup cocoa
2 eggs
1/4 cup butter, melted
1 teaspoon vanilla
1 13.5 oz. can coconut milk
1 cup cane sugar
1 cup chocolate chips
Optional: 1/3 cup chopped walnuts or pecans
- Heat oven to 350°F and spray a 8 x 8 baking pan with cooking spray.
- Whisk the dry ingredients together in a small bowl and set aside.
- Beat the eggs in a large bowl. Whisk in the butter, vanilla, and coconut milk. Mix in the sugar until smooth.
- Add the dry mix to the wet mixture and stir until smooth. Add in the chocolate chips and optional chopped nuts.
- Pour the batter into the prepared pan and bake for 1 hour. Remove from oven and let cool completely before cutting into squares. Keep brownies refrigerated.
