Maple Oatmeal Cookies
1 1/2 cups (3 sticks) butter, softened
1 3/4 cups maple syrup
1 cup cane sugar
2 large eggs
2 teaspoons vanilla extract
8 cups rolled oats
1 cup currants
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon sea salt
- Preheat oven to 350°F. Grease or cover two baking sheets with parchment paper.
- In a large bowl, beat together the butter, maple syrup, sugar, eggs, and vanilla until light and fluffy. Stir in the oats and currants.
- In another bowl, stir together the flour, baking soda, cinnamon, and salt. Add flour mixture to butter mixture and mix until combined.
- Drop by rounded teaspoonfuls about 2 inches apart onto prepared baking sheets and bake for about 15 minutes or until light brown. Cool cookies on wire racks. Makes about 4 dozen cookies.
