8 slices stale sandwich bread
3 eggs
1 cup milk
1 teaspoon vanilla
Pinch sea salt
1 tablespoon sugar
Jam of your choice
Butter for cooking

  1. If your bread is fresh, dry the slices out a bit in the oven at about 300°F for 10 minutes. This helps them not get too soggy and fragile.
  2. Whisk together the eggs, milk, vanilla, salt, and sugar in a shallow bowl or pie plate.
  3. Spread 1 heaping tablespoon jam on one side of a bread slice and top with another slice. Dip the jam sandwich in the egg mixture until soaked and place on a plate. Repeat with remaining bread slices until you have 4 sandwiches.
  4. Heat a heavy skillet over medium low heat. Melt 1 tablespoon of butter in the skillet and swirl to coat the bottom; carefully place a soaked sandwich or two in the pan. Cook until lightly browned, about 5 minutes. Don’t rush the cooking to make sure the custard cooks all the way through. Turn the sandwich and cook another 5 minutes until browned and cooked through. Remove from pan and keep warm in the oven or serve immediately while you cook the remaining bread. Serve with whipped cream, maple syrup, or sprinkled with powdered sugar, if desired
