Inside Out Cabbage Rolls
Serves 4
1 pound ground beef
1 large onion, chopped
1 large green pepper, chopped
1 small head cabbage, chopped
1 14.5-oz can fire roasted diced tomatoes
1 15-oz can tomato sauce
1 cup beef broth
1 teaspoon dried thyme
2 cups cooked brown rice*
Salt and pepper to taste
½ cup shredded cheddar cheese
chopped fresh parsley
- In a Dutch oven or large sauce pan, cook the beef, onion, and green pepper over medium heat until meat is no longer pink, about 8 minutes. Stir in the cabbage, tomatoes, tomato sauce, broth, thyme, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until cabbage is tender, stirring occasionally.
- Stir in rice and heat through. Remove from heat. Sprinkle with cheese; cover and let stand until cheese is melted. Serve sprinkled with chopped parsley.
*To cook brown rice: Bring 2 cups water, 1 cup long grain brown rice, and 1/2 teaspoon sea salt to a boil in a large sauce pan. Cover, reduce heat, and simmer for 45 minutes. Turn off heat and let steam for 10 minutes.
