Indian Almond Fudge Balls
1/2 cup sugar
1/4 cup water
1 cup almond meal
1/4 teaspoon ground cardamom
1/3 cup roasted pistachios, chopped
ghee or neutral oil
- Bring sugar and water to a boil in a medium sauce pan, stirring to dissolve the sugar. Reduce heat to medium and stir in the almond flour and cardamom. Cook, stirring, until mixture starts to pull away from the sides of the pan. Continue cooking a few minutes, stirring constantly. Remove from heat and let cool.
- Scoop out teaspoonfuls of dough and roll into balls. You may have to grease your hands with oil so the dough doesn’t stick. Roll the balls in the chopped pistachios. Serve immediately or keep refrigerated. Makes about about 12 balls.
