Grilled BLT
Is there anything better than a BLT? In fact there is. A grilled BLT! One of summer’s best culinary creations!
2 slices thick cut bacon
2 slices sandwich bread
soft butter for the bread
1 large juicy, ripe tomato
lettuce leaves, iceberg is ideal but green lettuce is fine
mayo of your choice
- Heat grill to medium. Clean the grill grate with a paper towel soaked in a bit of vegetable oil (use tongs to grasp the paper towel wad.) Butter the bread slices on one side.
- Lay the bacon and bread slices, butter side down, on the grill and close the lid. Cook for 2 minutes. Check to see how well done the bacon is and if the bread is toasty with nice grill marks. If they are, remove from grill. You can flip the bread and grill the other sides if you want but you don’t have to. Turn the bacon slices and cook another 1-2 minutes. They should also be grill marked but not blackened. Remove all from grill.
- Assemble the sandwich: spread mayo thickly on the ungrilled sides of both slices, cut the bacon slices in half, add your tomato and lettuce, and voilà!
