Greek Green Bean Salad
1 lb green beans, trimmed, cut to 1 inch lengths
sea salt
2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
1/4 cup red onion, chopped
1/2 teaspoon dried oregano or 1 teaspoon chopped fresh oregano
1/2 teaspoon dried mint or 1 teaspoon chopped fresh mint
salt and pepper to taste
pinch sugar
1/3 cup feta cheese, crumbled
Boil the green beans in salted water until tender crisp or the doneness you like. Rinse in cold water. Add beans to a bowl and toss with the onions, vinegar, oil, herbs, salt, pepper and sugar. Taste and adjust flavor with more dressing ingredients as needed. Add the feta cheese and toss briefly. This salad tastes better if it can marinate for awhile before serving, at least an hour.
