Graham Cracker Chocolate Chip Cookies

Got leftover s’mores ingredients like graham crackers? Make these tasty cookies to use up those pantry ingredients collected from over the summer.

1 stick (1/2 cup) butter, softened
1 cup brown sugar
1 teaspoon vanilla 
1 large egg
1 1/2 cups fine graham cracker crumbs
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 cup semi-sweet chocolate chips
Smoked salt, optional

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper or silicone mats.
  2. Grind about 12 graham crackers into fine crumbs in a food processor.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and brown sugar until creamy and well combined. Beat in vanilla and egg.
  4. In a medium bowl, whisk together the graham cracker crumbs, flour, baking soda, and salt. Add this to the butter mixture in two additions, mixing after each addition until just combined. Stir in chocolate chips.
  5. Portion into walnut-sized dough balls and evenly space on the baking sheets. Flatten slightly and sprinkle with smoked salt. Bake 10-12 minutes or until edges are set and middles no longer look raw.
  6. Let rest on baking sheets for several minutes before transferring to a wire rack to cool completely. Makes about 20 cookies.
