German Apple Pancake
2 large tart cooking apples
1/4 cup cane sugar
1/2 teaspoon cinnamon
1/2 cup butter (1 stick)
1 cup all-purpose flour
2 teaspoons cane sugar
1/4 teaspoon sea salt
2 large eggs
1/2 cup milk
1 teaspoon vanilla
- Preheat oven to 375°F degrees. Wash, core and slice the apples. Mix ¼ cup sugar with cinnamon. Sprinkle half the cinnamon sugar over sliced apples and toss to coat.
- Melt the butter in a 9” or 10” oven-proof skillet (cast iron works best). Saute the apples until they are just tender, about 5 minutes. Remove pan from heat and set aside while you make the batter.
- Sift together the flour, 2 teaspoons sugar and salt. Whisk the eggs, milk and vanilla in a separate larger bowl. Gradually add the flour mixture to the wet mixture and beat until smooth.
- Pour the batter over the sautéed apples. Sprinkle the top with the remaining cinnamon sugar and bake for 20 minutes or until puffed and golden brown.
