Garlic Scape Pesto
10 garlic scapes, finely chopped
1/3 cup grated Parmesan
1/3 cup slivered almonds
1/2 cup olive oil
Sea salt, to taste
Place the scapes, cheese, almonds and half the olive oil in the bowl of a food processor. Pulse to blend all the ingredients; add the remainder of the oil and pulse until smooth. Season with salt. Makes about 1 cup.
