Frozen Banana Popsicles
These frozen banana treats are easy to make and customize and are perfect for hot summer days. Kids will have fun helping to assemble these. The only hard part is waiting for them to freeze!
4-5 bananas, ripe but not overripe
wooden popsicle sticks or craft sticks
Toppings:
Peanut butter
Chocolate
Granola
Chopped nuts
Peanut butter
Crushed graham crackers
Crushed cookies
Shredded coconut
Candy sprinkles

Peel and cut the bananas in half. Carefully insert a popsicle stick in the cut end of the banana halves. Choose your own toppings! Press toppings into the bananas. Spread peanut butter on a banana and sprinkle/press with toppings. To make a chocolate coating, melt 1 cup chocolate chips with 1 teaspoon coconut oil in a shallow bowl in a microwave oven. Stir until smooth. Dip the bananas into the chocolate or spoon the chocolate to cover the banana. Let excess chocolate drip off, then coat with nuts, sprinkles, coconut, etc. Lay the bananas on a sheet pan covered with wax or parchment paper and freeze until solid, a few hours. Keep tightly covered in the freezer if you don’t eat them right away.
