Egg Zucchini Breakfast Wraps
Serves 2
4 eggs
1 tablespoon milk or half and half
salt and pepper to taste
1/4 cup shredded cheese
1 tablespoon chopped fresh sage and parsley
1 tablespoon butter
3 tablespoons onion, chopped
1 cup zucchini, small dice
1/4 cup chopped ham
2 large whole wheat tortillas
- Whisk eggs, milk or half and half, salt, pepper, and cheese in a small bowl.
- Melt butter in a medium skillet and fry onions over medium heat until lightly browned. Add zucchini, ham, and herbs and saute about 3-5 minutes. Pour in egg mixture and cook, stirring lightly just until eggs are set but not dry.
- Heat tortillas over open gas flame, if desired. Mound eggs atop the tortillas and roll up, burrito-style. Serve with salsa and sour cream or plain Greek-style yogurt.
