Easy Lemon Mousse

1 cup heavy cream
1/2 cup lemon curd*
1/4 cup powdered sugar, sifted
Optional: 1/2 teaspoon finely grated lemon zest, pinch turmeric, pinch salt
- Add the cream, lemon curd, powdered sugar, and optional ingredients to the bowl of a stand mixer with the whisk attachment. (Or use a hand mixer.) Whip until firm, about 90 seconds to 2 minutes.
- Portion into serving glasses or bowls and refrigerate for 1 hour or until ready to serve. Makes 4 servings.
*Lemon curd is a delicious sweet and spreadable treat made with lemon juice, sugar, eggs, and butter. It’s perfect with scones, toast, biscuits, etc.
