Cucumber Wakame Salad

Serves 4
3 cucumbers, peeled and thinly sliced
1/2 teaspoon salt
1/2 cup chopped wakame*
1/2 cup water
6 tablespoons rice vinegar
2 tablespoons mirin
2 tablespoons extra virgin olive oil
1/4 teaspoon dry ginger
2 green onions, thinly sliced
4 radishes, washed, trimmed and thinly sliced
black pepper to taste
Toss all ingredients together and let sit in refrigerator, covered, for several hours before serving.
*Soak wakame in cold water for 5 minutes to rehydrate
Wakame is a sea vegetable or edible seaweed. It has a subtly sweet flavor and is most often served in soups and salads. Japanese and Korean sea-farmers have grown wakame for centuries and they still are the main producers and eaters.
