Cucumber Avocado Salad
1 medium cucumber, peeled, sliced
1 ripe (but not mushy) avocado
1/4 cup finely chopped sweet or red onion
1/4 cup coarsely chopped cilantro
1 tablespoon champagne vinegar
1-2 teaspoons olive oil
salt & pepper, to taste
Halve the avocado and pull out the pit. Scoop out the halves, cut each in half lengthwise, and slice the halves. Add to a bowl with the cucumber and remaining ingredients. Toss gently. Taste and add more vinegar or salt, as needed. Enjoy immediately. This makes enough for two people.
