Crustless Quiche Lorraine for Two
½ cup yellow onion, chopped fine
4 oz chopped ham
1 tablespoon butter
4 large eggs
1/2 cup heavy cream
1/2 teaspoon sea salt
big pinch white pepper
big pinch nutmeg
1/2 cup grated Gruyère, Swiss, or cheddar cheese
- Heat oven to 375°F. Spray an 8 inch oven safe skillet with cooking spray.
- Heat the butter in a separate skillet over medium heat. Saute the onions until they start to brown around the edges, about 3 minutes. Add the ham and cook until heated through and starting to brown a little, one more minute. Scatter the ham and onions over the bottom of prepared skillet.
- Sprinkle the grated cheese over the onion and ham.
- Beat the eggs with the cream, salt, pepper, and nutmeg until smooth. Pour over the grated cheese and onion mixture. Bake for 30 minutes. Enjoy immediately.
