Potato Coshe
Serves 8
6 baking potatoes, peeled and grated
2 cups grated root vegetables such as parsnips, carrots, celeriac, yams, turnips
5 eggs
1 onion, diced small
2 garlic cloves, minced
1 teaspoon salt and pepper or to taste
1/4 cup or more vegetable oil
Topping
1 8 oz. container Crème Fraîche, or sour cream or Greek-style yogurt
2 green onions, minced
salt and pepper to taste
Heat oven to 350F°. Mix potatoes, root veggies, eggs, onion, garlic, salt and pepper in a bowl. Coat a 9 x 13 baking pan generously with oil. Pour in the potatoes, spread evenly in the pan, and bake for 1 1/2 hours until brown. While coshe bakes, mix creme fraiche, onion, salt and pepper and chill. Serve coshe with topping.
