Corn Tortilla Quesadilla
2 sprouted corn tortillas
2 oz grated cheddar cheese few splashes hot sauce
cooking spray or coconut oil
Optional fillings: thinly sliced red or green onion, sliced avocado, chopped cilantro, roasted peppers, chopped cooked chicken, cooked red, pinto, or kidney beans, diced cooked sweet potato
- Sprinkle the cheese over one tortilla, spread with optional ingredients and a few drops of hot sauce. Top with remaining tortilla.
- Heat a cast iron skillet over medium heat and spray with cooking spray or add a dab of coconut oil. Carefully place quesadilla in pan and cook until cheese starts to melt. Flip with a metal spatula and cook the other side a few minutes, pressing down gently with the spatula.
- Serve immediately with salsa and sour cream if desired. Serves 1.
