Classic Meatloaf
1 lb ground beef
1 lb ground pork
1/2 cup breadcrumbs
1 pastured egg
1 large shallot, minced
1 stalk celery, minced
2 tablespoons chopped parsley
1/2 teaspoon seasoned salt
1/2 teaspoon black pepper
1 tablespoon worcestershire sauce
4 tablespoons ketchup, divided
Heat oven to 350°F. Combine meats, breadcrumbs, egg, vegetables, seasoning, worcestershire sauce and 2 tablespoons ketchup in a bowl until well mixed. Form into a loaf shape on a greased baking pan or glass dish. Or press into a loaf pan. Brush with remaining 2 tablespoons ketchup. Bake for 1 hour 15 minutes or until a thermometer registers 165°F.
