Citrus Avocado Salad
I sumo, orange, or tangerine, sliced
1 ripe avocado, sliced
1/4 cup pine nuts, lightly toasted*
1/4 cup crumbled feta cheese
red onion slices
mixed baby greens
Dressing:
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon water
1/2 teaspoon fine citrus zest
1/2 teaspoon dijon mustard
1 teaspoon honey or maple syrup
salt and black pepper, to taste
- Arrange a handful of greens on two plates. Place sumo, avocado, and red onion slices over the greens. Sprinkle with the pine nuts and feta cheese.
- Whisk the dressing ingredients together and drizzle over the salads. Serve immediately.
*To toast pine nuts, scatter on a baking sheet and toast at 350°F for 5-8 minutes, until light golden brown.
