Chickpea Cucumber Salad
1 can garbanzo beans, rinsed, drained
1 medium cucumber, peeled, cubed
3 green onions, sliced thin
1 small red pepper, diced
1/4 cup chopped fresh parsley
1 lemon, juiced
2 tablespoons extra virgin olive oil
sea salt and black pepper to taste
Optional: crumbled feta cheese
Optional: additional fresh herbs such as tarragon, chives, mint, etc.
Toss all ingredients together. Taste and add more salt or lemon juice if needed. Serve with a little feta cheese if desired.
