Cherry Steak Salad
Make this fresh main dish salad, featuring fresh cherries, with a meat or protein component for an easy, complete summer meal. This recipe makes 1 serving.
1 small sirloin, ribeye, or flank steak, or any small steak
1/2 cup fresh cherries, halved, pitted
big handful arugula or baby salad greens
sliced red onion
feta cheese
toasted walnuts
Dressing:
1 tablespoon red wine vinegar
2 teaspoons olive oil
1/2 teaspoon grainy mustard
1/2 teaspoon maple syrup
salt and pepper, to taste
- Season and grill the steak to your liking. Rare to medium is ideal. Let rest for a few minutes before slicing.
- Whisk together the dressing ingredients.
- Arrange greens, cherries, onion slices, feta, and walnuts on a plate. Drizzle with dressing. Slice the steak, lay on top of the salad, and enjoy immediately.
