Introducing Tsar Nicoulai Caviar, a premium, sustainably-produced caviar from California. This caviar is hand-crafted in small batches without the use of antibiotics, hormones, GMOs, or synthetic preservatives. The company, founded in 1984, is the only ECOCERT eco-certified sturgeon farm in the U.S. They utilize an aquaponics system and grow butter lettuce side by side with the fish. They control every aspect of production from spawning, raising the fish, and harvest, to crafting the caviar and smoking the fish meat. If you ever happen to be in the Bay Area of San Francisco, the company offers farm tours and dinners.
