Carrot Ginger Salad Dressing
4 medium carrots, peeled, shredded
1 shallot, chopped
¼ cup ginger, peeled, chopped
2 tablespoons white miso
¼ cup rice vinegar
2 tablespoons raw honey
1 tablespoon toasted sesame oil
2 tablespoons extra-virgin olive oil
¼ cup water or more
½ teaspoon sea salt
white pepper to taste
Place all ingredients in a high speed blender or Vitamix and blend until smooth and creamy. Toss with washed and dried lettuce, baby greens, and cucumber slices.
