Carrot Apple Salad
4 large carrots, peeled, shredded
1 tart apple, chopped
1/3 cup raisins
1/4 cup plain Greek-style yogurt
1/4 cup mayonnaise
2 teaspoons Dijon mustard
1 tablespoon lemon juice
1/8 teaspoon pepper
Sea salt to taste
2 teaspoons maple syrup
In a bowl, combine the carrots, apple and raisins. In a small bowl, combine yogurt, mayonnaise, mustard, lemon juice, pepper, salt and maple syrup. Add to carrot mixture and toss to combine. Serves 6
