Cajun Kale Salad
2 cups frozen or fresh corn
1 bunch kale (about 6 cups), washed, stems removed, chopped
1 green pepper, diced
1 red pepper, diced
1 small sweet or red onion, minced
1 garlic clove, minced
1-2 teaspoons Cajun spice blend
Sea salt to taste
Cajun spice blend
2 teaspoons paprika
1/4teaspoon cayenne
1/4 teaspoon black pepper
1/4 teaspoon white pepper
1/4 teaspoon allspice
1/2 teaspoon thyme leaves
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra virgin olive oil
- Bring water to boil in a large sauce pan and add kale. Cook 4 minutes or until tender and still bright green. Remove to a strainer, rinse to cool quickly and drain well.
- Prepare spice mix. In a large bowl toss corn, cooled kale, red and green peppers, onion, garlic, oil, lemon juice and desired amount of spice mix together. Season with salt to taste.
