Brown Sugar Heart Pancakes
Use a large heart-shaped cookie mold to make these pancakes, or make your own using a piece of tinfoil. Here is a quick YouTube tutorial on how to make one. Note: instead of using tape, as the video suggests, use a paperclip instead. Easiest of all: you could also just make round pancakes and trim them into hearts.
1 cup all-purpose flour
1 tablespoon brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup milk
2 tablespoons butter, melted
Neutral oil, clarified butter, or ghee for frying
Optional: 1/2 cup mini chocolate chips, 1 cup raspberries, powdered sugar for sprinkling

- Mix the flour, sugar, baking powder and salt in a bowl. Beat the egg in another bowl. Whisk in the milk. Add the flour mixture to the egg mixture and stir to combine. Stir in the melted butter. Stir in optional chocolate chips or raspberries.
- Heat oil in a heavy skillet over medium-low heat. Place heart in pan and pour batter inside heart, making sure to spread it against all the edges. Cook until bubbles form. Carefully dislodge the mold and flip the heart. Cook another minute or so until lightly browned. Repeat with remaining batter. Serve pancakes sprinkled with powdered sugar.
