Broccoli Cauliflower Salad
2 cups broccoli florets
2 cups cauliflower florets
1/4 cup chopped red onion
1/4 cup chopped parsley
1 tablespoon chopped fresh mint
2 tablespoons white wine vinegar
3 tablespoons olive oil
Salt and pepper, to taste
1/3 cup feta cheese, crumbled
Lightly steam the broccoli and cauliflower until tender crisp. Let cool and toss with the remaining ingredients. Taste and adjust salt, pepper, and vinegar.
