Blueberry Cucumber Salad
1 medium to large cucumber, peeled, quartered length-wise, sliced thin
2 cups fresh blueberries
2 tablespoons sweet onion, chopped fine
1 tablespoon extra virgin olive oil
2 -3 teaspoons cider vinegar
1/3 cup coarsely chopped parsley
1/4 teaspoon sea salt
black pepper to taste
pinch of sugar
1/2 cup crumbled goat cheese, optional
.Toss all the ingredients together in a large bowl except the goat cheese. Serve sprinkled with goat cheese, if desired.
