Cast Iron Blueberry Cobbler
1 stick butter (1/2 cup)
1 pint blueberries
1 tablespoon sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
pinch salt
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon cinnamon
2/3 cup sugar
1/4 teaspoon sea salt
1/2 cup half and half
- Melt the butter in a 10-inch cast iron skillet. Remove from heat. Heat oven to 350°F.
- Toss the blueberries with 1 tablespoon sugar, lemon juice and zest and pinch salt in a bowl.
- Whisk together the flour baking powder, cinnamon, sea salt, and sugar in another bowl. Mix in the half and half with a wooden spoon or rubber spatula.
- Drop spoonfuls of batter into the melted butter. Spread it out as much as you can. The butter will splash over the top of the batter and that’s ok. Spread the blueberries over the batter.
- Bake for 35 minutes or until cobbler is golden brown. Serve warm with vanilla ice cream.
