Pico de Gallo

6 – 8 medium tomatoes, chopped
1 bunch cilantro, washed, stemmed, chopped
1/2 cup red onion, chopped fine
1 jalapeño, chopped fine
Lime juice to taste, start with 1
Salt to taste
A little fresh, minced garlic (optional)
A little olive oil (optional)

Combine all ingredients in a bowl and let sit for 30 minutes to let flavors meld before serving. Best enjoyed fresh but will keep for 2 days refrigerated.
