Sesame Cucumber Salad
1 medium cucumber, thinly sliced (peel if desired)
1 green onion, sliced
2 teaspoons tamari
2 teaspoons rice vinegar
1/2 teaspoon fish sauce
1 teaspoon toasted sesame oil
pinch red pepper flakes
sesame seeds for garnish
Whisk together dressing ingredients in a medium bowl. Add cucumbers and green onion and toss to coat. Refrigerate for 1 hour before serving to allow flavors to meld.
