Arugula Salad with Strawberries and Goat Cheese
Serves 4
3 tablespoons balsamic vinegar
2 tablespoons olive oil
1 tablespoon maple syrup
1/2 teaspoon salt
Pepper to taste
1 pint strawberries, washed, hulled, sliced
4 big handfuls baby arugula
1/3 cup thinly sliced red onion
1/2 cup soft goat cheese, crumbled
Whisk vinegar, olive oil, maple syrup, salt and pepper in a large bowl. Add the arugula, onion, and strawberries and toss to coat. Serve sprinkled with the goat cheese.
