Apple Pecan Blondies with Maple Cinnamon Glaze

1 stick butter, melted
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon sea salt
1 cup whole wheat pastry flour
1 cup tart apple, chopped fine
½ cup pecans, chopped

Glaze
1/2 cup powdered sugar
¼ teaspoon ground cinnamon
½ teaspoon vanilla
2 tablespoons maple syrup

  1. Heat oven to 350°F. Coat a 8 x 8 baking pan with cooking spray.
  2. Mix the butter and brown sugar until blended and smooth. Add the egg, vanilla, salt, and flour and mix until combined. Stir in the chopped apples and pecans.
  3. Spread batter into prepared pan and bake for about 30 minutes or until the center is set. Let cool. Whisk together the glaze ingredients and spread over blondies.
